How to make
Wash and boil the lamb head in a pressure cooker for about 20 minutes. Then we debone it and cut the meat, so that it is suitable for lamb soup. Strain the broth.
Pour the broth into a suitable pot and add water, until the amount is sufficient, add the chopped onion to it.
When the soup boils, add the meat and let it boil for about 10 minutes.
Finally, add the cleaned and washed rice and add it to the soup as well. It is ready when the rice is cooked. Season with salt and black pepper and remove it from the heat.
Wash the lovage and cut it into pieces and put it in the lamb soup.
Let it cool down and prepare the thickener, by beating the egg and yogurt with a wire whisk and by adding a ladle of the warm soup to them, stir vigorously and then another ladle of the soup and finally pour the prepared thickener into the pot with the soup and stir well.
