Ingredients

  • carrots - 6.4 oz (180 g) or 4 medium - sized ones
  • flour - 6.2 oz (175 g)
  • sugar - 4.4 oz (125 g)
  • oil - 1/2 cup (120 ml)
  • eggs - 2 pcs.
  • baking powder - 1/3 tbsp (3 g)
  • cinnamon - 0.1 oz (3 g)
  • almonds - 3.5 oz (100 g) ground
  • For the glaze
  • cream cheese - 6 oz (170 g)
  • powdered sugar - 1.1 oz (30 g)
  • lemon juice - from 1/2 pc.
  • vanilla sugar - 0.25 oz (7 g)
  • lemon peel - from 1 pc.

How to make

You need a baking pan with a diameter of 7″ (18 cm).

Mix 4.4 oz (125 g) of sugar with the eggs, cinnamon and oil. Beat with a mixer, until the ingredients are homogenized.

Mix the flour with the baking powder and add them to the beaten mixture.

Peel the carrots and finely grate them. Add the grated carrots to the mixture, as well as the ground almonds and mix everything again.

Now preheat the oven to 360°F (180°C). Transfer the mixture for the carrot cake into a baking pan lined with baking paper or grease it with butter.

The baking pan I used has a diameter of 7″ (18 cm). Bake it in the oven for 40 minutes.

If it starts to darken on top, you can put aluminum foil on it.

After the cake layer is baked, make the glaze.

Mix all the ingredients and beat them by hand.

Spread the cooled American Carrot Cake with the glaze and leave it in the refrigerator for 1 hour.
