Cut the chicken into pieces. Marinate them in the soy sauce and grated ginger for 2-3 hours.
Cut the onion (only the white part) into small pieces and use the spring onions for decoration. Strain the mushrooms and cut them into pieces.
Fry the marinated chicken for 10 minutes in heated olive oil. Separately, in another cookware, fry the onion and mushrooms and leave them for a short time under the lid to stew.
Add the cashews and stir the dish for a few minutes.
Finally, add the fried chicken, mix all the ingredients and leave the flavors to blend for 4-5 minutes.
