Ingredients

  • gemelli pasta - 8 oz (230 g)
  • chicken fillet - 0.9 lb (400 g)
  • olive oil - 2 tbsp.
  • onion - 1 small onion
  • carrot - 1 pc.
  • red pepper - 1 pc. roasted and peeled
  • garlic - 1 clove
  • tomatoes - 7 oz (200 g) diced
  • cooking cream - 4/5 cup (200 ml)
  • parmesan - 1.8 oz (50 g)
  • sugar - 1/2 tsp.
  • fresh basil - 1 tbsp. chopped
  • black pepper - 1/2 tsp.
  • salt - by taste

How to make

Roast and peel the red pepper. Cut the pepper and carrot into strips. Finely chop the onion and garlic.

Cut the chicken fillet into cubes. Heat the olive oil on medium heat in a deep frying pan.

Fry the diced chicken on all sides for about 10 minutes. Remove them from the pan. In the same pan, pour the chopped onions, carrots and peppers.

Cook for about 5 minutes, by stirring constantly. Add the garlic and cook for about 2 more minutes.

Add the diced tomatoes and mix well. Cook for about 5 more minutes.

Pour the cooking cream, basil and sugar. Boil the sauce. Season with salt and black pepper. Add the diced chicken. Cover with a lid and cook for about 10 minutes.

Meanwhile, cook the gemelli according to the manufacturer's instructions.

When ready, add the pasta to the sauce, mix well and sprinkle with parmesan.

The gemelli with chicken and vegetables are ready.
