How to make
Finely chop the washed sauerkraut and leeks. Grate the carrot on a coarse grater.
Pour half the oil into a pot and fry the leeks and carrots in it, until they soften.
Add the chopped sauerkraut and stir, pour a glass of warm water and stew under a lid for about 30 minutes, it should remain in fat. Pour the fried vegetables into a baking pan, sprinkle the very well washed and strained rice evenly on top. Pour 2 cups of warm water and add 2 pcs. of bay leaf.
Clean and wash the fish, add as much salt as you like (be careful with the salt), make two transverse slits in the fish and place a small slice of lemon in each one.
Place the mackerel on top of the sauerkraut, drizzle with the remaining oil and sprinkle with as much black pepper as you like. Place the tray with the fish dish in a preheated oven at 390°F (200°C) and bake for about 30 minutes, until the fish aquires an appetizing color.
