How to make
Clean the fish by removing the entrails, heads and fins. Wash and cut it into pieces and leave it to drain.
Arrange the pieces of fish in a baking pan, sprinkle them with salt and black pepper and pour the lemon juice over them.
Place the baking pan in an oven preheated to 360°F (180°C) and bake, until they aquire a light golden brown color.
While the fish is baking, briefly fry the finely chopped onion and pepper, the sliced carrot, in the butter melted in the oil. Add the rice and combined fish seasoning and fry briefly.
Spread the fried vegetables with rice in the baking pan on top of the baked fish. Add the peeled and diced tomato, pour 3 cups of hot water, stir gently and place the baking pan in the preheated oven.
Bake, until the rice is ready, remove the baking pan and wrap it with aluminum foil to steam the dish for about 10-15 minutes. Serve it.
