Ingredients

  • sea bream - 2 cleaned fish, 350 - 380 g each
  • grapefruit - 1 pc.
  • red onion - 1 onion
  • lemon - 1 pc.
  • salt - 1 tsp. or by taste
  • parsley - 4 - 6 sprigs
  • olive oil - 7 - 8 tbsp.

How to make

Cut the red onion into thin crescents. Wash and dry the sea bream with kitchen paper.

Line a baking tray with two large pieces of aluminum foil. Spread it generously with olive oil, spread the onion evenly over each piece, season with salt and drizzle with olive oil again.

Place the tray in an oven heated to 390°F (200°C) and roast, until the fish have lightly browned - about 10 minutes.

While the onion is roasting, salt the fish inside and out and spread it well with olive oil. Cut the lemon and grapefruit into thin rings.

Put the red grapefruit on the fried onions (3 circles in each piece of foil).

Insert two or three lemons into the bellies of the sea bream and place the fish on top of the red citrus. Arrange sprigs of fresh parsley on top, drizzle with a little more olive oil and fold the foil over, by sealing the fish well for roasting.

Put them the oven (again at 390°F (200°C)) and roast for 20-25 minutes.
