Ingredients

  • sardines - 0.9 lb (400 g)
  • oregano - a pinch
  • lemons - 1/4 slice
  • salt - 1/2 tsp
  • flour - enough to roll the fish in
  • fat - for frying
  • soy sauce - a few drops

How to make

The sardines are cleaned from the entrails. Do not remove the fish heads. Wash and strain them from the water. Leave them to slightly dry.

Season with salt, add a pinch of oregano and squeeze a quarter of a lemon. Leave the fish for at least 30 minutes.

Roll the sardines in flour and fry them in well-heated oil on both sides. I have heard that sardines are delicious fried in lard, but I have not tried this version.

Remove them and place them onto kitchen paper to absorb excess fat.

Season the sardines with a few drops of soy sauce and serve them with a glass of your favorite white wine or beer.

Garnish with a lemon slice.
