Ingredients

  • arugula - 2 handfuls of leaves
  • baby spinach - 3 handfuls of leaves
  • tomatoes - 2 pcs. medium - sized
  • walnuts - 1 handful
  • blue cheese - 1.1 oz (30 g)
  • mozzarella - 4.4 oz (125 g) fresh
  • basil - a few leaves, fresh
  • For the dressing
  • balsamic vinegar - 5 - 6 tbsp.
  • olive oil - 5 - 6 tbsp.
  • salt - by taste
  • honey - 1 tbsp.
  • balsamic reduction - for sprinkling (optional)

How to make

Peel and cut the tomatoes into large pieces. In a bowl, mix them with the arugula and baby spinach leaves.

Prepare the dressing, by mixing all the ingredients for it, until a homogenous mixture is obtained.

For an even richer taste, you can increase the vinegar or olive oil according to your taste.

Season the salad, mix it well and transfer it into a salad bowl.

Add the walnuts on top and the crumbled blue cheese and at one end arrange the mozzarella, cut into relatively thin slices.

You can place the basil leaves whole on the mozzarella or shred them roughly.

To finish it off, sprinkle with balsamic reduction if you like.
