How to make
Put the broths in 8 cups (2 liters) of water along with the finely chopped onion and carrot.
Add the bay leaf and white pepper.
As soon as the water boils, put the calamari in it and boil them for about 3 minutes.
For the filling, stew the seafood along with the onion in a deep frying pan with heated fat.
Pour the rice and as soon as it becomes transparent, pour 1 1/5 cups (300 ml) of the broth.
For the sauce, beat the yolks and add the slightly heated oil.
Puree them, until a smooth mixture is obtained and season with black pepper, lemon juice, salt and sugar.
Stuff the calamari with the filling and transfer them into a baking pan. Pour the sauce over them.
Bake the stuffed calamari for about 1 hour at a moderate temperature.
When serving, sprinkle them with fresh parsley.
