Ingredients

  • calamari tubes - 2 pcs. cleaned (about 340 g)
  • salmon trout - 9 oz (250 g) fillet (optional)
  • shrimp - 3 pcs. large / cleaned (about 100 g)
  • red peppers - 1 large pc.
  • garlic - 2 cloves
  • spring onions - 2 stalks
  • egg whites - 1 pc.
  • rosemary - 1 tsp. (fresh / finely chopped)
  • olive oil - 6 tbsp.
  • breadcrumbs - 2 tbsp.
  • salt
  • black pepper

How to make

Wash and dry the cleaned calamari tubes.

Finely chop the vegetables and the fish fillet and cut the cleaned shrimp into larger pieces.

Mix them and add the egg white, the breadcrumbs, the spices and half of the olive oil. Mix everything very well.

Fill the tubes with the stuffing and close the opening with toothpicks. Do not stuff the calamari too much.

Lightly cut each calamari crosswise 2-3 times on one side.

Place the appetizing stuffed calamari in a baking tray and brush them with the remaining olive oil.

Bake them in a very well heated oven at 390°F (200°C) for 15 minutes.

The filling is approximate according to the size of the calamari. My tubes were huge.

If you are using raw calamari, you can add the tentacles in the stuffing, by blanching them for 2-3 minutes in boiling water and then chopping them into small pieces.
