"If you are vegan or tired of meat, we have a recipe for zucchini and broccoli fritters, which are more than successful"

Ingredients

  • broccoli - 10.5 oz (300 g)
  • zucchini - 1 pc. (about 250 g)
  • almonds - 2.8 oz (80 g) raw, peeled
  • oats - 1.1 oz (30 g) fine
  • soy flour - 1.1 oz (30 g)
  • water - 1/5 cup (60 ml)
  • brewer's yeast - 0.7 oz (20 g)
  • black pepper - 2 pinches
  • salt - by taste
  • oil - for frying

How to make

Grate the zucchini on a coarse grater, without peeling it. Season with salt, stir and leave it in a large colander to drain the liquid, until it's time to use it.

Cut the broccoli into florets, their weight alone /without the stem/ should be 300 g.

Boil for 10 minutes without overcooking them, strain them and leave them to cool.

Place the almonds in a food processor to finely grind them.

Add the cooled broccoli, brewer's yeast, oats, salt, soy flour dissolved in the water and black pepper. Run the appliance on medium power for a few seconds.

Finally, add the zucchini to the mixture and mix. It is very important, that they are well drained, so that it does not become too liquid.

Form the vegetable patties with moistened hands and fry them, until they have nicely browned in the heated oil.

Serve the broccoli patties with your favorite sauce or a fresh salad.

These broccoli and zucchini fritters are very interesting, because at first glance they look like meatballs, but in reality they are absolutely vegan.
