How to make
Peel the zucchini, cut it and put the pieces in a small pot. Pour enough water to cover the vegetables, sprinkle with a little salt and boil on a medium heat for 10 minutes.
Five minutes before removing it from the heat, add chopped broccoli pieces to blanch them and that way they will keep their green color.
Add chopped parsley and remove the soup from the heat. Pour it into the jug of a blender, add sour cream, a pinch or two of black pepper, a clove of garlic and blend until a smooth mixture is obtained.
Transfer the vegetable soup into a bowl, add chia seeds, pre-soaked in cold water, so that they swell up and stir.
The broccoli, zucchini and chia soup is ready.
