"Mussels with rice and peppers always remind me of summer by the sea"

Ingredients

  • onion - 1 onion
  • garlic - 2 cloves
  • olive oil - 5 tbsp.
  • peppers - 3 pcs.
  • hot peppers - 1 pc. (optional)
  • frozen mussels - 1.1 lb (500 g)
  • white wine - 4/5 cup (200 ml)
  • tomatoes - 2 pcs.
  • rice - 1 cup
  • parsley
  • salt
  • ground black pepper - 1/2 tsp.

How to make

Finely chop the onion and garlic and fry them over medium heat, until they soften in a deep pan or pot.

Add the chopped peppers. If you like spicy food, add a chopped chili pepper.

Add the defrosted mussels and white wine into the pan.

When the wine has evaporated, add the grated tomatoes (or canned) and a glass of hot water.

As soon as it boils, add the washed rice, ground black pepper and as much salt as you like.

When the rice swells, add another one and 1/2 cup of water.

Cook the mussels with rice, until the rice is fully cooked. The finished mussels dish is sprinkled with finely chopped fresh parsley.
