  • garlic - 2 cloves
  • anchovy - 2 fillets
  • black pepper - freshly ground
  • white wine
  • extra virgin olive oil

How to make

The stuffed calamari is a very popular fish dish because calamari tends to go well with many types of stuffing. What I offer is one of the classic and very appetizing seafood recipes.

To make stuffed calamari, start by cleaning the calamari by removing the entrails and skin.

Soak stale bread in warm water for about 10 minutes.

With a sharp knife, finely chop the calamari tentacles and the side fins.

Heat the oil in a pan with the finely chopped garlic cloves and chopped anchovies, cook until the anchovies have melted. Add the chopped calamari that you have prepared, mix with the white wine.

After you have squeezed and cut the bread crumbs, add them to the pan with the fish, let everything flavor for a few minutes.

Transfer the stuffing you have made into a bowl and add the eggs, parmesan and chopped parsley and mix with a spoon until smooth. Season with black pepper and salt if needed.

Fill the calamari with the resulting mixture, do not fill them to the brim, otherwise the calamari will burst during cooking. Close them with a toothpick.

Fry two cloves of garlic in two tablespoons of extra virgin olive oil and the halved tomatoes. Add the stuffed calamari and let them brown, turning occasionally.

Pour the white wine, add salt and cook for about ten minutes under the lid or for 25 minutes, covered with foil.

Before finishing cooking, sprinkle the Italian stuffed calamari with chopped parsley.
