How to make
The chard leaves are washed, cleaned from the stalks and tough veins. The onion and carrot are cut into small pieces, put in a pot and stewed in a few tablespoons of olive oil.
After they soften, add the chard leaves. Stir the vegetables, add the paprika and one grated tomato. After a short while of cooking, water is poured into the pot and as much salt as you want is added.
As soon as the vegetable soup boils, add the sliced potatoes. When the potatoes are cooked, pour in the cooking cream, leave the soup to boil for another minute or two and remove it from the heat.
Wait for it to cool down and puree it, until it becomes creamy.
Serve the chard soup with croutons and a spoonful of cream or thick yogurt. If desired, sprinkle it with freshly ground black pepper.
