How to make
Clean 1 whole chicken well, wash and cut it into pieces, pour 5-6 cups of water over it and put it to boil. Once boiling, add salt and the finely chopped onions, boil the soup until the meat boils well.
Take it out onto a plate. Make a roux from the flour and butter, dilute it and pour it into the soup. Boil for another 10 minutes.
Thicken it with 2 egg yolks and lemon juice. Serve it sprinkled with plenty of finely chopped parsley.
