For these aromatic muffins, combine the dry ingredients in a bowl and mix.
In a separate container, mix the egg, oil and milk. Add the vanilla.
Pour the liquid mixture into the dry ingredients and stir - just enough to mix them. Once a homogeneous mixture is obtained, add the blueberries.
Pour the mixture into silicone muffin molds, by filling 2/3 of their volume.
Dosing is easily done with an ice cream scoop.
Sprinkle each mold with coconut sugar.
Don't be skeptical about the cinnamon - it really opens up the blueberry flavor.
The Blueberry Muffins can be served with confectionery cream, sugar and cream cheese.
