How to make
In a bowl, season the rabbit meat with salt and black pepper and add the curry. Mix everything well and leave it to marinate for a few minutes.
During this time, cut the onion into medium-sized pieces and put it to poach in a Dutch pot (cast iron) with olive oil.
When the onion softens before browning, add the meat and stir well, until it aquires a golden color. When it is sealed, add the water and white wine.
Cover the Dutch pot and cook for 20-30 minutes on medium heat (or place it in the oven for 50 minutes). If you see the liquid evaporating, add a little more water.
Before removing it from the heat, make sure that the meat has become very tender.
You can remove the meat and puree the sauce before serving for a nicer appearance of the dish.
Serve it with mashed potatoes or just with a slice of homemade bread.
