Ingredients

  • flour - 10 oz (280 g)
  • baking powder - 1.5 tbsp (15 g)
  • sugar - 5.3 oz (150 g)
  • eggs - 2 pcs. XL
  • yogurt - 8.5 oz (240 g)
  • milk - 3 1/3 tbsp (50 ml)
  • vanilla - 1 tbsp. liquid extract
  • lemon juice - 1 tbsp. freshly squeezed
  • salt - 1 pinch
  • jam - of choice (optional)
  • oil - 2.7 fl oz (80 ml)
  • sugar stars and balls (for decoration)
  • For the cream
  • strained yogurt - 3.5 oz (100 g)
  • cream cheese - 2.1 oz (60 g) Philadelphia
  • vanilla - 1/2 tsp. liquid extract
  • powdered sugar - 1 tbsp. with a tip

How to make

Beat the eggs with the sugar, until a white mixture is obtained. Add the oil, vanilla, lemon juice and both types of milk to them while beating at all times.

Sift the flour with the baking powder and salt into the liquid mixture. Mix with a wooden spoon, by making circular movements in one direction.

Pour the mixture into muffin molds, by adding a spoonful of jam of your choice, if you like. Sprinkle the colorful sugar stars and balls on top.

Bake in an oven heated to 360°F (180°C) for 30 minutes, or until they are fully baked.

While the muffins with jam are cooling, beat the strained yogurt with the cream cheese, powdered sugar and vanilla. Put a spoonful of the cream on each muffin and sprinkle more of the colorful and festive shapes on top.

Serve the birthday muffins immediately.
