Ingredients

  • fresh sausage - 10 oz (300 g)
  • potatoes - 2 pcs.
  • peas - 5.3 oz (150 g)
  • carrots - 1 pc.
  • onion - 1 onion
  • celery - 1 stalk
  • soup noodles - a handful (crushed)
  • flour - 1 level top tbsp.
  • lovage
  • tarragon
  • olive oil
  • black pepper
  • egg yolks - 1 pc.
  • yogurt - 2 tbsp.

How to make

Cut the sausage into pieces. Finely chop the onion, carrot and celery stick.

Pour 1 cup of olive oil into a pot. Add the chopped vegetables, fry for 2-3 minutes and add the pieces of sausage. Fry, until they aquire a golden color.

Pour about a liter and a half of warm water. Boil. Add the potatoes and peas.

Boil the soup, until the vegetables are cooked. Add a handful of crushed noodles and stir with a level top tablespoon of flour, which is dissolved in a little water.

Once the noodles are cooked, remove the pot from the heat.

In a large bowl, beat the egg yolk and yogurt with a wire whisk. Add a pinch of lovage and tarragon - preferably fresh.

If they are dry, add them while the soup is boiling.

Add ladles of the hot soup into the thickener, while stirring. Pour the stirred potato soup into the pot and season it with a pinch of black pepper and a few drops of lemon juice (optional).

Tip: Remove the fat from the soup with a ladle before adding the thickener. After thickening the Potato Soup with Sausage and Peas, pour it back, so the yolk doesn't ''eat up'' the fat!
