How to make
Oven - 370°F (190°C);
A flat tray covered with baking paper.
Mix the almond flour with the sugar with a spoon. Beat the egg with a fork, add the almond extract. Add about 7 tsp. of this egg mixtur to the almond flour mixture. Mix with a spatula, until it turns into a paste.
You should get a wet and sticky mixture, which can fit when squeezed in your hand. Leave it aside.
The defrosted puff pastry is opened up and with a round mold (about 4″ - 10 cm), circles are cut out and 4 circles are obtained. They are placed in the tray with paper and pierced with a fork. Spread them with the remaining egg.
Again, four circles are cut out with a mold and then with a mold, which is about 6 cm, cut out the middle and to form a ring, which is placed on the circle. base A slight indentation is formed.
In this indentation, place 2 tsp. of the almond paste. Place half an apricot on top. Spread the sides with an egg and sprinkle the apricot with light brown sugar.
The baskets are baked at 370°F (190°C) for about 25-30 minutes.
The apricots with almond paste in puff pastry are very tasty!
Note: Every MasterChef Anna Olson recipe I have tried to make has ended up being a failure. Every time I read extensively, watch her video, write, translate and in the end nothing works out right.
Her recipes are beyond fantastic, but it turns out that they are difficult to prepare and many of the products she has are not available in some countries and if you find a substitute and use them - it doesn't work.
This recipe of hers is more than easy and that's why I decided to prepare it and above all that, ready-made puff pastry can be used, because in this hot weather, at least I wouldn't try making one myself.
The puff pastry is very pleasant, crunchy, with a wonderful almond filling and the aroma of almonds and slight sour-sweet fresh apricot.
