"Extremely tasty vegetable patties, which we will try together with our favorite yogurt sauce!"

Ingredients

  • tomatoes - 1.8 lb (800 g)
  • onion - 1 onion
  • garlic - 3 cloves
  • parsley
  • salt
  • flour - 1 cup
  • baking powder - 1/2 tbsp. (5 g)
  • white cheese - 9 oz (250 g)

How to make

Dice the tomatoes and leave them to drain. Put them in a bowl and add finely chopped onion, garlic and parsley to them.

Add the flour, baking powder, salt and crumbled white cheese. Mix well and leave the bowl in the fridge for 1 hour.

Heat oil in a pan. Using a spoon, scoop out of the mixture and drop it into the heated oil.

Fry the vegetable patties on both sides, until they aquire a golden color. Take them out and leave them onto kitchen paper to absorb the excess fat.

Serve them with an yogurt and garlic sauce.

The Santorini Tomato Patties are ready.

Note: If necessary, you can add more flour - it depends on the variety of tomatoes.
