"Get started with the Chocolate Fudge Cookies, which are vegan as well"

Ingredients

  • spelt flour - 4.6 oz (130 g)
  • cocoa - 1.4 oz (40 g)
  • salt - a pinch
  • olive oil - 3 tbsp (45 ml)
  • dark chocolate - 4.2 oz (120 g)
  • water - 2 2/3 tbsp (40 ml)
  • espresso - 1 shot (40 ml) or water
  • coconut sugar - 4.2 oz (120 g)

How to make

For this type of fudge, mix the flour, salt and cocoa in a bowl.

Melt the chocolate along with the oil.

Heat the water with the coffee and sugar, until the sugar melts, without boiling it.

Mix the chocolate mixture and the coffee mixture and add them into the bowl with the flour.

Mix well and form 18 equal sized balls and press them down lightly to form chocolate cookies.

Bake them in a preheated oven at 340°F (170°C) for 10-12 minutes and leave them cool and harden.
