For this summer fruit cake, cut the apricots into circles or thin slices. The olive oil is poured into a pan and after it is heated, the apricots are placed in it. Fry them on both sides, until they aquire a golden color. The juice they have released is set aside.
Baking paper is placed in a baking pan, after which the apricots are arranged tightly next to each other.
Prepare the cake mixture by first beating the egg whites well, then the yolks, by adding honey to them.
Add the yogurt to the yolk mixture, in which you have activated the soda and stir again, but now with a spatula. After a homogeneous mixture is obtained, pour the walnuts, flour and baking powder. Mix. Add the vanilla and then little by little pour the egg whites into the resulting mixture.
The dough should become airy and light and that's why it should not be beaten with a mixer after the eggs have been beaten.
Pour the mixture into the baking pan and bake in a moderately heated oven (about 360°F (180°C)) for about 30-40 minutes, or until it is fully baked.
When the apricot cake is ready, turn it over, so that the apricots are on top.
After it has cooled, spread it with the remaining sauce from the baked apricots.
If desired, the healthy sugar-free apricot cake can be sprinkled with powdered sugar.
Serve this dietary cake with a scoop of healthy ice cream!
