How to make
Mix the milk and butter in a convenient container. Heat it enough to melt the butter.
Be careful not to boil it. Put one and a half teaspoons of dry yeast into the warm liquid.
Sift the flour into a bowl with a pinch of salt. Briefly beat the egg with two tablespoons of sugar. Pour the milk into the flour, add the beaten egg and sugar and knead a soft dough.
The dough is extremely pleasant to work with. Shape the kneaded dough into a ball. Place it in a floured bowl and spread it with a teaspoon of olive oil. Cover the bowl with a piece of cling film and a towel. Leave it in a warm place, until the dough doubles in volume.
In a bowl, mix the brown sugar and cinnamon.
Roll out the risen dough onto a floured surface. Roll it out into a rectangle. Sprinkle it with the sugar, which is mixed with cinnamon. Roll it up. Place the roll in a 1 liter oblong cake tin lined with baking paper.
Cover it with a towel and leave it for another hour or so, or until the dough fills the mold. Heat an oven to 160°C. Before putting the bread in the oven, spread it with the beaten yolk mixed with two tablespoons of milk. Bake, until it aquires a golden brown color.
Be careful, so that the bread does not burn immediately. Usually baked goods smeared with egg yolk burn on top quickly even in a moderately heated oven. Therefore, after the first 7-8 minutes, cover it with a piece of aluminum foil.
Cool the finished cinnamon bread on a wire rack! Slice it after it has cooled completely!
