Ingredients

  • zucchini - 2 large pcs.
  • sausages - 2 pcs.
  • tomatoes - 3 - 4 pcs. (piccadilly, cherry, or other small variety)
  • mozzarella - 1 pc. (125 g)
  • tomato purée - 1 1/5 cups (300 ml)
  • garlic - 1 clove
  • salt
  • black pepper
  • olive oil

How to make

Wash and cut the zucchini lengthwise. With a small spoon, scoop out the core to create a boat. Season with salt.

Cut the sausage and tomatoes into circles. Use a small variety of tomatoes, since there is not much space in the zucchini.

Grate the mozzarella on a coarse grater. Place shredded mozzarella in each boat. Place a sausage circle on it and a tomato circle.

Dilute the tomato puree with a cup of warm water or vegetable broth. Season with salt, a pinch of black pepper and a crushed clove of garlic. You can add finely chopped basil.

Pour the tomato sauce into a baking pan. Arrange the zucchini boats. Drizzle olive oil over each one.

Bake at 370°F (190°C) in a preheated oven with a fan for about 30 minutes.

Just before you take the Zucchini Boats with Sausage and Mozzarella out of the oven, sprinkle them with the remaining cheese!
