How to make
If you don't have spelt, you can make the wonderful sponge cake with plain white flour.
In the bowl of a mixer, add the soft butter and add the sugar. Beat with the butterfly attachment, until a smooth mixture is obtained.
Replace with the egg beater attachment and add the eggs one at a time.
Pour the kefir and add the cheese. Sift the flour with a pinch of salt, baking powder and vanilla.
Add it in portions to the first mixture, by stirring with a spoon, until a smooth mixture is obtained.
Grease and flour a 8″ (20 cm) round cake tin. Pour the mixture.
In several places on the mixture, put a spoonful of cherry jam or anything else to your taste.
Bake the cherry sponge cake at 360°F (180°C) in a preheated oven for about 35 minutes. Turn the finished sponge cake onto a wire rack.
Sprinkle the kefir and cherry jam sponge cake with powdered sugar!
