Ingredients

  • flour - 12 oz (350 g)
  • milk - 2/3 cup (150 ml)
  • sugar - 1.8 oz (50 g)
  • olive oil - 3 1/3 tbsp (50 ml)
  • yeast - 0.35 oz (10 g) from a cube
  • honey - 1 tbsp.
  • salt - a pinch
  • for the stuffing
  • apples - 4 pcs.
  • walnuts - 3.5 oz (100 g)
  • brown sugar - 3 tbsp.
  • lemon juice - 3 - 4 tbsp.
  • cinnamon - 1 tsp.
  • for spreading
  • egg whites - 1 pc.
  • crystal sugar - 1 tbsp.

How to make

In the warmed milk, dissolve the yeast with a tablespoon of honey. Sift the flour with a pinch of salt. Add to it the sugar, olive oil and pour the milk with the yeast. Knead a soft dough.

Form it into a ball and place it in a bowl. Spread the dough lightly with olive oil to prevent it from drying out, cover the bowl with a piece of cling film and a towel. Leave it in a warm place, until the dough doubles in volume.

Meanwhile, prepare the filling. Grate the apples. Drizzle them with a few tablespoons of lemon juice, sprinkle with brown sugar and a teaspoon of cinnamon. Add the coarsely chopped walnuts.

Mix the products well. Place the risen dough onto a floured surface. Divide it into three equal parts. Each part is about 7.8 oz (220 g). Line a 11″ (28 cm) baking pan with a piece of baking paper.

Spread the paper with a brush dipped in olive oil. On a floured surface, roll out one crust at a time with the diameter of the baking pan. Put the first crust in the baking pan, sprinkle it evenly with the filling and cover it with the other crust.

Sprinkle some of the filling again and finish off the cake with the third crust. Make several slits in the middle with a sharp knife. Leave the baking pan in a warm place for about 30 minutes, until the dough relaxes.

Beat one egg white with a fork. Spread the apple cake and sprinkle it with granulated sugar. Bake at 340°F (170°C) in a preheated oven with a fan, until an appetizing color is obtained. Remove the finished apple yeast cake from the oven and while it is still warm, sprinkle it with powdered sugar. Cool it on a wire rack and then cut it.

Note: If the apples are juicier and release a lot of juice, you can squeeze them or sprinkle and dry them with a few tbsp. of breadcrumbs!

And more: I chose a larger baking pan size to make sure, that the cake will bake well on the inside! Oftentimes, baked goods with fruit inside remain sticky, if the pan is suitable for it!
