Ingredients

  • zucchini - 2 pcs.
  • eggs - 1 pc.
  • breadcrumbs - 4 tbsp.
  • white cheese feta - 1 slice (about 100 g)
  • mint - 1 pinch
  • parsley - 1 pinch
  • olive oil
  • salt
  • black pepper - 1 pinch
  • for the breading
  • cornflakes

How to make

Grate the zucchini on a coarser grater. Season them with salt and leave them for 30 minutes, then squeeze out the separated water with your hands. Place the zucchini in a suitable bowl and add the crumbled cheese, the egg and the breadcrumbs.

Season with a pinch of freshly chopped mint and parsley and a pinch of black pepper. Pour the cornflakes into a large plate and crush them with your hands. Grease your hands with olive oil and form small patties from the prepared mixture.

Roll them in the cornflakes and arrange them a greased baking pan. Drizzle a teaspoon of olive oil over each vegetable pattie.

Bake the zucchini patties at 390°F (200°C) in a preheated oven with a fan for about 20 minutes. Serve them with dill flavored yogurt. Enjoy!
