How to make
Pit the cherries, cut them into pieces and pour the the orange juice, sugar and vanilla over them. Leave them like this for 30 minutes.
Sift the flour into a bowl and mix it with the sugar and vanilla. Cut the butter into cubes, which should be very hard and cold.
Start rubbing with your fingers, until fine crumbs are obtained and add the egg yolks - also cold. Continue rubbing, until they are fully integrated into the crumbly mixture.
All you have to do is pour the cherries into a baking pan or individual refractory bowls. Spread the crumble on top and place it in an oven heated to 360°F (180°C) for about 25-30 minutes, or until they aquire an appetizing golden color.
Serve the dessert warm or cold in the company of a scoop of ice cream or sour cream, which it goes beautifully with.
