Cut the prunes and apricots into thin strips.
Fry the dried fruit in a little olive oil. Add the dry spices - mint and savory herb. Stir and add the couscous. Pour the vegetable broth and leave the mixture to cook.
When the liquid evaporates, add a lump of butter.
Finely chop the almonds and roast them in a separate pan. Coarsely chop the garlic cloves and add them along with 1 tbsp. of olive oil.
Clean the chicken fillet and cut it into large cubes. Increase the heat on the stove and add the chicken to the nuts and garlic. Season with salt and black pepper. Seal the chicken pieces well on all sides. Add the honey and caramelize the meat.
Serve the dish by placing the couscous on the bottom with dried fruit and add the pieces of caramelized chicken with almonds on top.
