How to make
The dried fruit are chopped or grinded into small pieces along with 2.8 oz (80 g) of the walnuts.
Beat the egg with the sugar without beating it into a thick foamy mixture.
Put the spelt flour in a bowl and add the egg, soft butter, coffee, milk and a pinch of salt.
Mix everything, until a homogeneous mixture is obtained and then add the walnuts and dried fruit.
Stir again, until a homogeneous soft pastry dough is obtained.
With greased hands, tear walnut-sized balls and arrange them in two trays lined with baking paper. Flatten them slightly and stick a piece of walnut from the remaining nuts in the center of each cookie.
Bake the trays with walnut cookies one after the other in a preheated oven at 360°F (180°C) for about 15 minutes each.
The baked walnut cookies are left to cool and then they are served.
For longer storage they can be stored in a tightly closed airtight container or box.
