How to make
Cut the pork belly into pieces, if it's not already cut. Boil it for about 1 hour. Keep the broth.
Clean and finely chop the onion and carrot and cut the mushrooms into thin pieces.
Heat the oil in a pan on the stove at a moderate temperature and fry the onion and garlic, until they soften (for about 2-3 minutes). Add the mushrooms and fry them for about 5 more minutes.
Add the rice and corn and stir-fry, until the rice becomes translucent, or for about 5 minutes. Season with salt and black pepper.
Pour the rice and broth, in which the breasts were boiled, into a baking pan.
Arrange the pork belly on top. Bake the pork with rice in a preheated oven for about 40 minutes, or until the rice has absorbed all the broth.
