How to make
The chicken mix usually consists of wings, chicken carcass, neck, liver, heart, gizzards.
The chicken mix is placed in a pot of boiling water, which has been salted beforehand. Boil for about 20 minutes, by periodically removing the foam with a slotted spoon. After it is cooked, it is deboned and finely chopped.
At the bottom of another pot, pour the oil and the carrots, which have been previously cleaned and finely chopped.
After the carrots are fried, add the butter and flour and stir continuously, until they are fried.
Add the meat mix along with the broth and add more water, if needed. Season with as much black pepper and salt as you like.
When the chicken soup boils, pour the orzo. Leave it on medium heat, in order for the orzo to cook.
The parsley is finely chopped and added at the end.
