How to make
Oven - 390°F (200°C).
1 cup = 8.5 fl oz (250 ml).
Muffin tins or metal baking tins - two, 12 pcs. each.
Stir the sugar, water and lemon peel over moderate heat in the saucepan, until the sugar has melted - it should boil for about 10 minutes after boiling. Wait for it to cool and remove the lemon peel.
The milk is mixed smoothly along with the flour with a wire stirrer, then placed on moderate heat and boiled, until it thickens.
Remove it from the heat and slowly begin to add the syrup, by stirring constantly with a wire stirrer. Leave it to cool to moderate temperature and add the yolks one by one.
Stir, until a smooth mixture is obtained. Set it aside.
Sprinkle a little flour on the worktop or place the puff pastry on the paper itself. Unfold it and roll it out slightly into a rectangle. Sprinkle it completely with cinnamon and spread it everywhere by hand.
It is rolled out on the narrow side with the help of the paper. It is cut with a knife into pieces, which are about 1″ (2.5 cm) thick, depending on the size of the molds.
The pieces of dough are placed upright and flattened down by hand. Each piece of dough is placed in the mold and formed with your fingers around its walls. Spread it out as thin as possible. With a ladle pour the egg mixture and fill the molds.
Place the muffin tin in a preheated oven at 390°F (200°C) and bake for about 18-20 minutes or until nice baked spots are obtained on the baskets.
Pastel de Nata is a great dessert!
