How to make
Remove the leaves and wash the cauliflower. Pat dry with kitchen roll.
Mix the oil, salt, paprika and tomato paste in a small bowl. You can add more herbs and spices of your preference.
This is the classic version. Stir the mix to avoid clumping. Brush the cauliflower with the spice mix. Pour the remaining mix into the cauliflower.
Grease a baking tray and place the cauliflower in it.
Preheat the oven to 390°F (200°C) and cover the tray with tin foil.
Bake for 30-40 minutes at 390°F (200°C) with fan (45-50 without fan). Remove the tin foil and bake for 5 more minutes.
This recipe is cooked in Gourmet restaurants in Berlin. A chef from one of those restaurants was kind enough to share it with us. He used to serve it plain, or on a kanape, such as quinoa.
Once presented the way you prefer, sprinkle with parsley and drizzle with lemon juice.
