"Breakfast today - lean mekitsi, which melt in your mouth"

Ingredients

  • flour - 0.9 lb (400 g)
  • warm water - 6.8 fl oz (200 ml)
  • oil - 2 tbsp.
  • sugar - 1 tbsp.
  • salt - 1 tsp.
  • fresh yeast - 0.7 oz (20 g)
  • oil - for frying

How to make

Dissolve the yeast and sugar in half of the warm water, add 1 tbsp. of flour and stir.

Leave it in a warm place to activate.

In a bowl, sift the flour and add the salt and oil. Add the activated yeast, mix and knead a soft and smooth dough.

Wrap the dough with cling film and leave it in a warm place to rise and almost increase its volume 3-4 times.

Place the dough onto a floured surface without kneading it too much.

Roll it out into a 3.1″ (8 cm) thick crust, cut it into squares or rectangles with a knife and fry in preheated oil over low heat.

Arrange the prepared mekitsi onto kitchen paper to absorb the excess fat and serve them warm.

The Lean Mekitsi are ready.
