Ingredients

  • blueberries - 1.1 lb (500 g)
  • sugar - 4.4 oz (125 g)
  • water - about 1 2/3 cups (400 ml)
  • agar agar - 2/5 tsp (2 g)
  • hibiscus - 2 tbsp. (dried leaves)
  • melon - 1.3 lb (600 g)

How to make

Extremely fresh summer dessert without animal products, since we will prepare the blueberry jelly instead of with gelatin, with agar agar, which is entirely plant-based.

The blueberries are blended with 2.6 oz (75 grams) of sugar. Strain them mixture and place on a scale, by adding water, until it shows a total weight of 1.1 lb (500 g).

The liquid is placed on the stove at a low temperature of up to 190°F (90°C).

Add the agar agar and stir for 2-3 minutes.

The jelly, at this stage is still liquid and it is distributed in cups without filling them to the top to make room for the watermelon in the dessert.

Cool them for 20 minutes and refrigerate them for at least 2 hours, until jelly becomes firm.

Prepare a syrup of hibiscus flowers, by boiling them for 10 minutes with 2/5 cup (100 ml) of water and 1.8 oz (50 g) of sugar.

Add the dried flowers and cover the dish for 30 minutes, so that they can release their color and aroma.

Before serving, cut the watermelon into small cubes and pour the syrup. The pieces of fresh fruit are placed on the jelly in the cups and it is served.
