How to make
Mash the bananas with a fork, until they turn into a puree.
Grind the oats in a coffee grinder or in another suitable device. I grinded them along with the whole einkorn grains, because I didn't have ready-made flour. But if you grind them separately, they don't need to be finely ground and small pieces may remain.
Beat the eggs into a bowl with a pinch of salt and gradually add the milk, oats, einkorn, baking powder and mashed banana.
Beat well, until a smooth mixture is obtained.
Heat a non-stick pan over medium heat. Grease it with oil or butter and pour a small ladle of the mixture and form an oatmeal pancake with a round shape using the back of a spoon. Do not make them large in diameter. Make them smaller and medium thin.
Bake the American pancakes for 2-3 minutes on one side (bubbles should start to form on the surface and it should slightly hardened), then turn the pancake on the other side for another minute.
Serve the warm and delicious pancakes with fresh or dried fruit.
