How to make
After you have cleaned the melon, cut it into pieces.
Put it in a deep baking pan and leave it while you prepare the syrup.
Boil the syrup from the sugar and water and then add the pieces of melon.
Leave the mixture to boil, until it's ready, or until the syrup thickens.
How to test the syrup? Drop a drop on a plate, wait for it to cool down and if it isn't runny, then it's ready.
Two or three minutes before removing it from the heat, add the citric acid and stir well.
Optionally, you can add geranium leaves to the finished jam.
Pour it into jars while it's still warm, close with lids and sterilize the delicious melon jam for 5 minutes.
