How to make
Clean the fish. Season it with ground black pepper and salt. Chop the rosemary sprig and garlic very finely, almost into a paste.
Peel and slice the potatoes. Season them with salt, rosemary and garlic paste and black pepper. Line a baking pan with parchment paper.
Pour a few tablespoons of olive oil. Add the potatoes. Place the fish on top. Cover it with potato rings. Drizzle it with white wine.
Bake the sea bass at 370°F (190°C) in a preheated oven for about 40 minutes.
Serve the oven-baked sea bass with potatoes while it's still warm.
