How to make
Wash and chop the tomatoes, spring onions and parsley. Transfer them into a bowl.
Cut the avocado in half, remove the seed and use a spoon to separate the fruit from the skin. Cut it into cubes and add it into the bowl.
Drizzle with lemon juice, olive oil and as much salt and black pepper as you like.
Add the crushed garlic cloves.
Stir gently and serve the vegetable salad immediately.
