Ingredients

  • tomatoes - 6.6 lb (3 kg)
  • eggplants - 2.2 lb (1 kg)
  • red peppers - 3.3 lb (1.5 kg)
  • carrots - 10 pcs.
  • onions - 3 pcs.
  • garlic - 2 heads
  • oil - 1 cup
  • sugar - 1 cup
  • vinegar - 1/3 cup
  • red wine - 1/2 cup
  • salt
  • cumin
  • black pepper
  • cayenne pepper

How to make

The eggplants and carrots are washed, peeled and cut into cubes.

Add the finely chopped onion and stir. Also clean and cut the tomatoes and peppers into pieces and add them to the eggplants and carrots.

Add the remaining products and spices, stir and place them in the baking pan.

Put the baking pan in the oven at 300°F (150°C) and stir occasionally.

Once it thickens, remove the baking pan and leave it to cool slightly. Using a blender, blend the products and place the mixture back into the oven, by covering the pan with foil. Cook, until the desired density of the lyutenitsa is obtained.

Once it is done, distribute it in jars and sterilize them for 10-15 minutes.

If desired, you can add freshly chopped parsley.

The rich oven-backed ajvar (lyutenitsa) is ready.
