  • red peppers - 6.6 lb (3 kg)
  • tomatoes - 4.4 lb (2 kg)
  • green tomatoes - 2.2 lb (1 kg)
  • carrots - 1.3 lb (600 g)
  • onion - 3 onions
  • garlic - 1 head
  • parsley - 1 bunch
  • black pepper - 1 tsp.
  • oil - 1 and 1/4 cups
  • vinegar - 1/3 cup
  • sugar - 2/3 cup
  • salt - 3 tbsp.

How to make

Wash all vegetables well. Clean the peppers from the stalks and the seeds. Peel the carrots and peel the onions and garlic.

Cut all of the vegetables - peppers, red and green tomatoes, carrots, onions and garlic cloves into large pieces. Put them in a deep baking pan and bake them in the oven for about 2 hours at 390°F (200 degrees), while stirring occasionally with a wooden spoon.

Remove the baking pan, add the finely chopped parsley and mash the vegetables until smooth.

Add add oil, vinegar, sugar, salt and black pepper in the lyutenitsa. Stir well and fill clean and dry jars with the oven-baked lyutenitsa. Close them tightly with caps and sterilize them for 10-15 minutes.

Remove the jars and turn them over for 15 minutes. The oven-baked lyutenitsa is ready to spread on slices of bread.
