How to make
Prepare the dressing by mixing the mayonnaise with olive oil, lemon juice and salt well.
Cut the garlic clove in half and add it and if the herbs are fresh, chop them very finely, otherwise add them as they are, by crushing them lightly with your fingers.
Seal the container tightly and shake it well.
Just before serving the salad, process the vegetables: Grate the carrot, chop the iceberg into medium-sized pieces and cut the tomato into cubes or as you like.
Place the veggies in a bowl, season them with salt, drizzle them with olive oil and lemon juice and stir.
Distribute this salad mixture in a suitable plate and spread the arugula leaves and baby spinach on top.
At the top, for a colorful and tasty finish, arrange the beets, which have been cut into thick strips. Sprinkle a little more salt and olive oil.
Drizzle the dressing on the sides and on the vegetable salad, by using your imagination to create a beautiful look.
Note: It is best to remove the two halves of garlic before adding the herbal dressing, because they have already done their job well, which is only to release a light and not intrusive aroma.
