Ingredients

  • chicken - 1 pc. (about 1.7 kg)
  • butter - 2.8 oz (80 g)
  • oranges - 2 pcs.
  • lemons - 1 pc. (or lime)
  • honey - 2 tbsp.
  • cloves powder - 1 tsp.
  • coriander - 1 tbsp. (dried leaves)
  • cumin - 1 pinch
  • cinnamon - 1 pinch
  • black pepper - 1 tsp. (freshly ground)

How to make

Cut one orange into thin circles and arrange it in a greased baking pan. Squeeze the other one along with the lemon.

Melt the butter over low heat. Add all of the spices and honey to it. Stir with the citrus juices and remove it from the heat.

Wash and dry the chicken. Spread the inside with the prepared mixture and place it on the orange slices in the baking pan. Drizzle it with more of the butter and citrus mixture, by distributing it evenly, so that it absorbs into every corner and crease of the chicken.

Put the baking pan in a preheated oven at 260°F (125°C) (without a fan) for 30 minutes, then increase it to 280°F (140°C) for another 1 hour.

The idea is to cook it over low heat and for it to absorb the sauce and that way it will become incredibly tender and delicious.

We all love a crispy crust and to achieve it, increase the oven to 360°F (180°C), grease or pour the rest of the herbal mixture over the chicken once more and roast it, until it is lightly browned. The skin turns out really superb!

The aroma, tenderness and oriental taste will enchant you!

I saw this recipe some time ago from an Arab chef on a Mexican show. Since then, even if I change the combination of spices sometimes, I almost always roast the chicken this way.

Yes, it takes more time, but not much effort. It is flavored just once and it is just cooked in the oven and the low heat does all the work.
