How to make
Crush the biscuits in a blender. Add the melted butter to them and mix, until butter crumbs are obtained.
Spread the mixture on the bottom of a cake tin with a removable ring. The diameter of the mold is 24 cm. Arrange the small eclairs on the cake layer - we have baked them and filled them with dairy cream in advance.
Beat the cream cheese with a mixer, add the melted milk chocolate in a water bath and continue to stir. Finally, add the sour cream.
Pour this mixture evenly over the eclairs. Leave the cake for a few hours in the refrigerator to harden. Then the removable ring of the cake tin is removed and it can be decorated as desired.
I melted 3.5 oz (100 g) of chocolate in a water bath and made leaves and flowers from fondant. I poured chocolate over the eclair cake and arranged the flowers and leaves in the middle.
* The sugar figurines are melted from cream, so they should be placed on the cake just before serving it.
The no-bake eclair cake is great.
