How to make
Blend the biscuits in a blender. Melt the butter and mix with the biscuits. Spread out the mixture in a form with removable sides and smooth out with a spoon. Leave in the freezer briefly to harden.
With the mixer on low, beat the sour cream, cream cheese, sugar, vanilla and lemon juice.
Make the gelatin according to packet directions. Mix it slowly and in lots with the cheese cream.
Beat the dairy cream in a separate bowl. Combine both creams in a bowl.
Take the biscuits out of the freezer and distribute the cream over them. Return to the freezer.
Melt the jam in a water bath. Take the cheesecake out and pour the jam over it evenly.
Leave in the fridge overnight to harden.
