How to make

To make the soft cake with mascarpone and chocolate, beat the eggs in a bowl and start mixing with an electric mixer.

Add the sugar and mascarpone, by beating at all times with an electric mixer. Add the bitter cocoa, a little flour, baking powder and mix, until the dough is smooth and lump-free.

Pour the dough into a cake tin with a diameter of 9.5″ (24 cm) greased and floured. The bottom is lined with baking paper. Place the cake to bake in a ventilated oven at 340°F (170°C) for about 45 minutes or in an oven at 360°F (180°C) for about 45 minutes.

Once the chocolate cake is fully baked, leave it to cool completely before removing it from the cake tin and decorate it with powdered sugar or chocolate glaze.

For the glaze, boil the milk and add the chocolate, remove it from the heat and stir and pour it over the cake. Make as much glaze as you like by increasing the amount of chocolate and milk.

You can put sliced banana pieces under the glaze and pour it over them. It can be smeared with whipped cream or only with powdered sugar.

Let's enjoy our Italian mascarpone cake as a light breakfast, accompanied by a nice glass of hot milk or cappuccino!
